Give a new kitchen a coordinated start. This six-piece Damascus kitchen set includes four knives, stainless steel kitchen scissors and a wooden block, with different tools for chopping, slicing and trimming.

A gift they can use. A thoughtful wedding, anniversary or housewarming gift for couples and hosts who enjoy cooking and sharing meals.

67-layer Damascus blades · 10Cr15CoMoV steel core · 60–62 HRC hardness

What makes this set worth choosing?

  • An edge designed to keep working: The hard 10Cr15CoMoV cutting core is selected for edge retention. That matters when you want to slice, trim and chop with control, meal after meal. Appropriate use, hand washing and sharpening when needed help maintain performance.
  • A blade for each part of the meal: Prepare a cabbage slaw with the cleaver, chop herbs with the chef’s knife, slice fruit with the utility knife and trim meat with the boning knife. You can choose the blade that suits the task.
  • Finishing you can see up close: Repeated water grinding, manual grind-line correction and two-stage hand sharpening focus on the blade’s finish and cutting edge.
  • Distinctive on your kitchen bench: Layered Damascus blades, dark wooden handles and polished metal details give the set a coordinated appearance. The wooden block keeps the collection organised.
  • A gift with an everyday purpose: Four useful knives, scissors and a block, presented in the black i-DOO box pictured—a thoughtful choice for someone setting up a kitchen or someone who loves to cook.

What’s included: 6 pieces

  • Chinese Cleaver: A broad blade for slicing cabbage, preparing vegetables and cutting boneless meat. Its wide face also helps transfer chopped ingredients from the board to the pan. This is a preparation knife, not a bone chopper.
  • Chef’s Knife: Your everyday knife for chopping vegetables, mincing herbs and portioning boneless meat. Useful for everything from weeknight stir-fries to weekend meal preparation.
  • Utility Knife: A smaller blade for controlled everyday cuts, including slicing fruit, trimming vegetables and preparing smaller ingredients.
  • Boning Knife: A narrow, pointed blade for trimming fat and sinew and working around bones to separate meat. Cut through the surrounding meat and connective tissue rather than through hard bone.
  • Multi-Purpose Kitchen Scissors: Detachable stainless steel kitchen scissors for cutting small chicken bones and joints, opening crown-style beer bottle caps and cracking walnuts. Separate the two halves for thorough cleaning after food preparation.
  • Wooden Knife Block: The slotted wooden block pictured keeps the four knives and scissors together, with a dedicated place for each tool.

Kitchen scissors: four practical functions

From preparing chicken for dinner to opening drinks when friends come over, the included scissors bring several useful jobs into one tool.

  • Cut small chicken bones and joints: Portion chicken wings and work through small poultry bones and joints during meal preparation. Avoid large, hard bones and frozen food.
  • Open beer bottle caps: The integrated bottle opener lifts crown-style metal caps from beer and soft-drink bottles.
  • Crack walnuts: Place a walnut in the serrated grip between the handles and squeeze to crack the shell.
  • Take apart for cleaning: The two halves separate, giving you access to the overlapping blades and pivot area where food residue can collect. Hand wash with mild detergent, dry both halves thoroughly and reassemble securely before use or storage.

The scissors are stainless steel. The 67-layer Damascus construction, 10Cr15CoMoV core and 60–62 HRC specification apply to the four knives.

Materials and finish

  • Knife blades: 67-layer Damascus steel with 10Cr15CoMoV steel core and a specified hardness of 60–62 HRC. The layered blade pattern is shown in the close-up photographs.
  • Knife handles: Dark wooden handles with visible grain, complemented by polished metal bolsters and end caps.
  • Kitchen scissors: All-metal stainless steel construction.
  • Storage: A wooden block with individual slots. This listing includes the slotted block pictured, not a magnetic block.

The craftsmanship behind the blades

The blades combine layered steel, controlled heat treatment, water grinding and hand finishing.

  • 67-layer construction: A central cutting core is supported by 33 layers on each side. This layered structure creates the characteristic Damascus pattern, while the cutting core forms the working edge.
  • Vacuum heat treatment: Controlled vacuum heat treatment develops the steel's working properties. The specified hardness for the HJ knife blades is 60–62 HRC.
  • Repeated water grinding: The blades receive three to four grinding passes, with manual correction of uneven grind lines for a carefully finished surface.
  • Two-stage hand sharpening: The edge receives a second hand-sharpening stage as part of the finishing process, refining the cutting edge for food preparation.
  • Checks between production stages: Quality inspections take place between production stages before the knife moves to the next step.

The result brings together a defined steel specification, a distinctive layered appearance and careful edge finishing. Edge retention also depends on what you cut, the board you use and how you maintain the knife.

From everyday meals to weekend entertaining

Use the cleaver to prepare vegetables for a stir-fry, the chef’s knife for larger ingredients, the utility knife for fruit and smaller preparation tasks, and the boning knife to trim meat before cooking. Having a separate tool for each task lets you choose a blade that suits the ingredient and the cut.

A useful gift for someone who loves cooking

A coordinated kitchen set is a thoughtful choice for a housewarming, wedding, birthday or Christmas gift. The set includes the black presentation box shown. Gift wrapping is available; see the store’s gift-wrapping options for details.

Frequently asked questions

What do 67 layers and 60–62 HRC actually mean?

The 67 layers describe the blade’s construction: one central cutting core with 33 layers on each side. HRC is the Rockwell hardness scale; the HJ blades are specified at 60–62 HRC. The core steel, heat treatment and edge finishing all matter to how a knife performs—layer count alone does not tell the whole story.

Will I still need to sharpen the knives?

Yes. Every working kitchen knife needs sharpening over time. How often depends on use, cutting surface and care. Use a suitable whetstone or professional sharpening service rather than relying on a fixed “years without sharpening” promise.

What steel are the knives made from?

The four HJ Series knives feature 67-layer Damascus steel, 10Cr15CoMoV steel core and a specified hardness of 60–62 HRC. These blade specifications apply to the four knives; the kitchen scissors are stainless steel.

Does “6-piece” mean six knives?

No. You receive four knives, one pair of kitchen scissors and one wooden knife block: six pieces in total. The presentation box is packaging.

Why choose this set instead of a single chef’s knife?

The chef’s knife handles general preparation, while the smaller utility knife, narrow boning knife and broad cleaver give you different blade shapes for more specific jobs. The scissors and block complete the set.

Can I use the cleaver to chop bones or frozen food?

No. Use these knives for appropriate food preparation, including vegetables and boneless meat. Avoid hard bones, frozen food and twisting or levering the blades.

Can the kitchen scissors be taken apart for cleaning?

Yes. Separate the two halves to clean the blade overlap and pivot area, especially after preparing raw chicken. Hand wash and dry thoroughly, then reassemble securely before using them again.

Is the knife block magnetic?

No. The included block is the slotted wooden model shown in the photographs.

Can the knives go in the dishwasher?

No. Hand wash with mild detergent and dry immediately. Do not soak the wooden handles. Put the knives and scissors back into the block only when completely dry.

Care for your set

  • Use a wooden or suitable food-safe plastic cutting board; avoid glass and stone cutting surfaces.
  • Wash and dry the blades after use, especially after contact with acidic ingredients.
  • Wipe the wooden block clean and keep it dry; do not immerse it in water.
  • Maintain the knife edges with a suitable whetstone or a professional sharpening service.
  • Store safely and keep out of reach of children.
